
How Traditional Haggis Is Made In Scotland
Making traditional haggis in Scotland is a centuries old tradition. Insider’s Claudia Romeo ventured to Edinburgh, Scotland to explore the process up close with James Macsween, a third generation haggis producer whose family butcher shop has become one of the most successful haggis companies in the UK.
The key ingredients for authentic haggis include spiced meat, encased in animal intestine, with a blend of salt, spices and other components based on the secret 67-year-old recipe Macsween uses. The main ingredients are lamb lungs, beef fat and a closely guarded mixture of spices crafted to perfection by his family over generations.
Macswen and his family take great pride in their traditional haggis making process, striving to make the same high quality product that his grandfather did almost a century ago. It’s an art form that has been passed down through the generations and still remains popular today with many Scots enjoying the savory dish.
In addition to the secret recipe, the most important part of making traditional haggis is selecting high quality ingredients and mastering the art of stuffing. The meat must be cleaned, cut and pounded into a rough mince before being combined with oatmeal and spices. Once the filling is ready it’s packed firmly into sheep’s intestine which has been washed clean – ensuring that the haggis has a rich, moist texture and delicious flavor. The casing is then sewn closed with a needle and thread to create the perfect haggis shape.
The result of Macsween’s hard work is a classic Scottish dish loved by locals as well as tourists. As Macswen proudly states, “Haggis is an embodiment of our culture and a representation of who we are as Scots.” He believes that the traditional recipe is timeless, and will continue to be enjoyed for generations to come.
