Ingredients (makes one 20cm tart, or 12 small tarts)
For the pastry:
- 200g plain flour
- 100g cold butter, diced
- 1 tbsp caster sugar
- 1 egg yolk and 1–2 tbsp cold water
For the filling:
- 75g butter, melted
- 150g soft light brown sugar
- 1 tbsp white wine vinegar
- 2 eggs, beaten
- 200g mixed dried fruit (raisins, sultanas, currants)
- 75g walnuts, roughly chopped
The method
1. Make the pastry. Rub the butter into the flour until it resembles breadcrumbs, stir in the sugar, then bind with the egg yolk and a little cold water. Wrap and chill for 30 minutes.
2. Line the tin. Roll out and line a 20cm tart tin (or cut rounds for a tartlet tray). Chill again for 15 minutes, then blind-bake at 180°C for about 12 minutes.
3. Make the filling. Whisk together the melted butter, brown sugar, vinegar and beaten eggs. Stir in the dried fruit and chopped walnuts.
4. Bake. Spoon the filling into the pastry case and bake at 180°C for 25–30 minutes (12–15 minutes for small tarts), until set with a slight wobble and a golden top. Cool in the tin.
How to serve it
Ecclefechan tart is best served just warm or at room temperature, cut into small slices — it is very rich. A spoonful of lightly whipped cream, crème fraîche or vanilla ice cream balances the sweetness beautifully. It keeps well in a tin, which is part of why it became such a popular Christmas bake.
