How to Make Scottish Clapshot: The Orkney Dish That’s More Than the Sum of Its Parts

There’s a particular sound that means Burns Night has properly begun in an Orkney kitchen: the thud and scrape of a masher against the bottom of a pot, working butter into neeps and tatties until they turn from two separate vegetables into one golden, creamy whole. That dish is clapshot, and if you’ve never had it, you’re missing one of Scotland’s quietest culinary triumphs — a recipe so simple it feels almost embarrassing to write down, and yet so easy to get wrong.

Clapshot comes from Orkney, and its story is older than most people realise. The Orcadian writer John Firth wrote about eating it back in 1920, in his book about growing up in an Orkney parish, describing it simply as a curiously named vegetarian dish served alongside bere bannocks. Nine years later, the food writer F. Marian McNeill — herself an Orcadian — set down the first proper written recipe in her landmark book The Scots Kitchen. Her version included chives, which matters more than it sounds, because it tells you chives weren’t a modern flourish added later for prettiness. They were there from the start.

Nobody has ever definitively pinned down where the name comes from. The most popular theory is that it’s simply the sound of the masher hitting the pot — a sort of onomatopoeia for cooking. It’s a lovely theory, and entirely unprovable, which feels about right for a dish this unpretentious.

Neeps, tatties, and getting the ratio right

This is where most clapshot recipes outside Orkney go wrong. Half-and-half potato and swede is common in recipe books, but ask anyone who actually cooks clapshot on the islands and you’ll get a firmer answer: roughly two parts potato to one part neep, or as the locals on Orkney put it, no more than a third neep to tatties and certainly no less. Too much swede and the mash turns wet and stringy. Too little and you lose both the flavour and that lovely pale gold colour that makes clapshot instantly recognisable on the plate.

Use a good floury potato — Golden Wonder, Maris Piper, or King Edward all work. Waxy potatoes turn gluey under the masher and won’t give you the texture you’re after. For the neep, go for one that feels heavy and firm. If you can get one that’s been through a frost, even better — the cold sweetens it noticeably, which is part of why clapshot is at its very best in the depths of winter.

The method

Peel your potatoes and neep. Cut the potatoes into good-sized chunks and the neep into smaller dice, since it takes longer to soften. Start the neep in a pot of cold, salted water and give it a head start of a few minutes before adding the potatoes. Bring everything to the boil, then simmer until both are completely tender — you’re looking at around 20 minutes once everything’s in, though check with the tip of a knife rather than the clock.

Drain thoroughly. This step matters more than people think: return the empty pot to a low heat, tip the vegetables back in, and stir for a minute or two until the steam stops rising and the surface looks properly dry. Skip this and you’ll end up with watery clapshot no matter how carefully you mash it afterwards.

Mash in plenty of butter — proper Orkney butter if you can get it, but any good salted butter will do the job. Season generously with salt and black or white pepper. Stir through a good handful of finely snipped chives. Some cooks add a finely chopped raw onion at this stage instead of frying it separately, which gives a gentler, more mellow flavour than the fried version — a method said to have been a favourite of the Orcadian poet George Mackay Brown. Others prefer to fry the onion first for a bit of sweetness. Both are traditional; neither is wrong.

One thing the Orkney cooks are firm about: no milk or cream. Butter alone is enough, and adding dairy just makes the mixture too loose.

Serving it

Clapshot is always served straight from the pot, freshly mashed and hot — never baked or browned in the oven the way you might do with creamed potatoes. It belongs alongside haggis more than almost anything else in the Scottish kitchen, which is why you’ll see it on every Burns Night table across the country in late January. But in Orkney itself, it’s never been an occasion-only dish. You’ll find it on pub menus in Kirkwall and Stromness right through the winter, served alongside local beef, lamb, or a good rich stew.

If you happen to have leftovers, don’t waste them — shape cold clapshot into patties, press them into a little seasoned flour or oatmeal, and fry until golden on both sides. It’s arguably even better the second time around.
